Perfect Guacamole VEGAN

This guacamole is 100% plant-based with zero animal products. Every ingredient is naturally vegan — ripe avocados, fresh lime juice, crisp veggies, and bright herbs. No substitutions needed. Serve with tortilla chips (most are vegan; just check that they use plant-based oil, not lard) for a guilt-free party dip.
Ingredients
- 3 ripe Hass avocados
- 2 tbsp fresh lime juice (about 1 large lime)
- 1/2 tsp fine sea salt, plus more to taste
- 1/4 cup (40g) red onion, finely diced
- 1 small jalapeño, seeded and finely minced
- 2 tbsp fresh cilantro, finely chopped
- 1 Roma tomato, seeded and diced small
Instructions
- Prep the avocados. Cut each avocado in half lengthwise around the pit. Twist the halves apart and remove the pit.
- Scoop and mash. Scoop the flesh into a medium bowl. Add lime juice and salt. Mash with a fork to your desired consistency — chunky is ideal.
- Add the mix-ins. Fold in the diced red onion, minced jalapeño, chopped cilantro, and diced tomato. Stir gently.
- Taste and adjust. Add more salt for flavor, lime juice for brightness, or jalapeño for heat. Taste until it sings.
- Serve. Serve immediately with tortilla chips. Press plastic wrap directly onto the surface to prevent browning if storing.
Vegan Notes
Naturally vegan: Guacamole is one of the easiest vegan recipes because it needs zero substitutions. Every ingredient is plant-based.
Check your chips: Some tortilla chips are fried in lard (animal fat). Look for chips that list vegetable oil (canola, sunflower, or corn oil) in the ingredients. Most mass-market corn chips are vegan.
Variations
- Mango Guacamole: Fold in 1/2 cup of diced ripe mango for a sweet-savory twist.
- Smoky Guacamole: Add 1 finely diced chipotle pepper in adobo sauce and 1/2 tsp of ground cumin.
- Roasted Garlic Guacamole: Squeeze 3–4 cloves of roasted garlic into the avocado before mashing.
