Perfect Guacamole VEGETARIAN
Yield: 6 servings · Appetizer · Mexican
Guacamole is naturally vegetarian — every ingredient in this recipe is plant-derived with zero meat or meat byproducts. Avocados are incredibly nutrient-dense, packing healthy monounsaturated fats, fiber, and potassium. This simple recipe lets the avocado shine with just the right amount of lime brightness and jalapeño heat.
Ingredients
- 3 ripe Hass avocados
- 2 tbsp fresh lime juice (about 1 large lime)
- 1/2 tsp fine sea salt, plus more to taste
- 1/4 cup (40g) red onion, finely diced
- 1 small jalapeño, seeded and finely minced
- 2 tbsp fresh cilantro, finely chopped
- 1 Roma tomato, seeded and diced small
Instructions
- Prep the avocados. Cut each avocado in half lengthwise around the pit. Twist the halves apart and scoop the flesh into a medium bowl.
- Mash. Add lime juice and salt. Mash with a fork — leave it slightly chunky for the best texture.
- Fold in mix-ins. Add the diced red onion, minced jalapeño, chopped cilantro, and diced tomato. Stir gently.
- Taste and adjust. Add more salt for flavor or lime juice for brightness.
- Serve immediately with tortilla chips.
Pro Tips
Make it a meal: Serve this guacamole alongside vegetarian quesadillas, black bean nachos, or stuffed peppers for a complete vegetarian Mexican-inspired dinner.
Soak the onion in cold water for 5 minutes to remove the harsh bite of raw onion.
Seed the tomato before dicing to prevent watery guacamole.
Variations
- Mango Guacamole: Fold in 1/2 cup of diced ripe mango for a sweet-savory twist.
- Smoky Guacamole: Add 1 finely diced chipotle pepper in adobo sauce and 1/2 tsp of ground cumin.
- Roasted Garlic Guacamole: Squeeze 3–4 cloves of roasted garlic into the avocado before mashing.
