Weigh your ingredients. Volume measurements (cups) vary by how tightly you pack flour. A kitchen scale gives consistent results every time. 1 cup of all-purpose flour = about 120g.
Room temperature matters. Butter, eggs, and dairy blend more evenly at room temperature. Take them out 30-60 minutes before you start mixing.
Don't overmix. Once flour is added, mix just until combined. Overworking gluten makes cakes and muffins tough. For tender results, fold gently.
Oven thermometer. Most ovens run 25-50°F off from the dial setting. An oven thermometer costs a few dollars and prevents under/over-baking.
Baker's percentage is universal. Professional bakers use baker's percentages because they scale perfectly. Flour is always 100%, and every other ingredient is relative to it.
